Jobs description

CHEF

                                                                                                                                                             Job Description

The Chef is responsible for all food production services, including planning, organizing, managing and controlling the kitchen’s activities to ensure the execution and quality of all food that is served to the customers.

The Chef is responsible for the following tasks:

  • Daily inspections of work areas and ensure that hygiene and cleanliness standards, as well as the standards of Health and Safety in the food industry are met
  • Oversee all of the activities in the kitchen (organize and manage the production, the manipulation of appliances and food, ensure that the standards of quality and freshness of food are respected, etc.)
  • Oversee and participate in the preparation of ingredients, mise en place (food prep), and menu items including sushi
  • Oversee the preparation and presentation of food orders, equipment, dishes, maintenance and overall operations
  • Management of inventory
  • Oversee the reception and storage of kitchen products
  • Human resource management (may include hiring and training of the staff, scheduling, distribution of work, evaluation of efficient and conflict management)
  • Oversee customer service
  • Strong understanding of the cash system

ASSISTANT CHEF

The Assistant Chef is the administrator of the food production services, whose role includes supporting the Chef in the execution of his responsibilities

The Assistant Chef is responsible for the following tasks:

  • Proceed with daily inspections of work areas and ensure that hygiene and cleanliness standards, as well as the standards of Health and Safety in the food industry are met
  • Oversee all of the activities in the kitchen (organize and manage the production, the manipulation of appliances and food, ensure that the standards of quality and freshness of food are respected, etc.)

MAKI ROLLER

The Maki Roller assists the Chef and the Assistant Chef in the food preparation.

The Maki Roller is responsible for the following tasks, under supervision of the Assistant Chef and Chef :

  • Participate in the preparation of ingredients, mise en place (food prep), and menu items including sushi
  • Cleaning and maintenance of the kitchen equipment, storage and preparation areas, as well the work surfaces according to the current hygiene regulations.
  • Know, master and apply the standards of hygiene and cleanliness
  • Assist with the reception and storage of kitchen products

KITCHEN ASSISTANT

                                                                                                                                                                Job Description

The Kitchen Assistant assists the Maki Roller who is asked to prepare sushi, by executing tasks to accelerate the preparation of the dishes.

The Kitchen Assistant is responsible for the following tasks, under supervision of the Maki Roller:

  • Participate in the basic preparation of ingredients, mise en place  (food prep) and menu items
  • Cleaning and maintenance of kitchen equipment, storage and preparation areas, as well the work surfaces according to the current hygiene regulations.
  • Know, master and apply the standards of hygiene and cleanliness
  • Assist with the reception and storage of kitchen products

CASHIER

                                                                                                                                                               Job Description

The Cashier must ensure excellent customer service. The role includes welcoming the clientele and offering a friendly, quality service. The Cashier must take customer satisfaction into account to build loyalty. As well, the cashier must be versatile as he or she must execute various tasks.

The Cashier is responsible for the following tasks, under supervision of the Assistant Chef and Chef:

  • Ensuring friendly, quality customer service
  • Master the Sushi Shop menu
  • Explain the menu items and make helpful suggestions to the clientele
  • Executing the tasks related to the cash system
  • Use the Sushi Shop Label Maker labeling system
  • Ensure the cleanliness, order and set up of the service areas and the dining room
  • Know, master and apply the standards of hygiene and cleanliness
  • Cleaning of kitchen equipment, storage and preparation areas, as well the work surfaces according to the current hygiene regulations.
  • Offering support to the kitchen employees
